Peychaud’s Bitters was created around 1830 in New Orleans. Formulated as an apothecary bitter for health and also different from Angostura bitters.
Peychaud's has gentian in it but with hints of anise and mint. They say New Orleans created it - but it was Antoine Amedee Peychaud who created the bitter and a healthy toddy for people who were ill. This healthy toddy included Peychaud's bitters, French brandy, water and sugar… voila, the Sazerac was born!
